中文摘要: 将二维相关光谱分析技术和偏振荧光分析技术同时引入到荧光光谱分析中用于快速检测食用植物油的品质,采用加热温度变化、加热时间变化、浓度变化和偏振角的变化(这里指发射荧光的空间方向)等4种外扰因素,探讨食用植物油的动态荧光光谱变化规律,从分子水平和化学物理的角度研究食用植物油中荧光物质在各种外扰下的变化规律;提出了通过提取二维相关光谱图信息新的方法,采用等高线面积、等高线面积变化率、等高线面积的重心位置(两方向的坐标)和自相关强度等定量表征二维相关光谱信息的特征参数建立食用植物油的快速品质检测的校正模型的方法;探索将偏振角的变化作为一种外扰动形式下的二维相关荧光光谱分析的可能性。完成6种常用食用植物油的种类快速判别、纯度分析、掺假油的种类判别和掺假量的分析等4个方法的建立,同时完成基于二维相关光谱和偏振荧光分析技术相结合的用于食用植物油品质分析的软件1套。

英文摘要: Two-dimension correlated and polarized fluorescent analytical technologies are introduced into fluorescent spectrometric analysis at the same time for rapid detection of edible vegetable oil quality. The variation regularity of dynamic fluorescent spectra of edible vegetable oil is to be investigated through changing heating temperature, heating time, concentration and polarization angle (i.e., the aerial direction of emission fluorescent light) and other external disturbing factors. The variation regularity of fluorescent substances in edible vegetable oil under various external disturbances is studied at molecular level and in physiochemical view. A novel method for retrieving information from two-dimension correlated spectral images is put forward, and contour area, variation rate of contour area, focus position of contour area (i.e., coordinates of the two dimensions), and autocorrelation intensity are employed to quantitatively characterize typical parameters of two-dimension correlated spectral information, all of which are used to establish calibration model for rapid detection of edible vegetable oil quality.
