中文摘要: 目前,国内外腊肉和香肠品质检测方法有感官检测、理化检测等,但受主观因素影响、检测复杂时间长,不能现场快速检测。因此,创新提出以高光谱成像全尺度特征视角研究腊肉和香肠肉品品质(包括挥发性盐基氮TVB-N、氧化程度TBA、菌落总数、酸价和过氧化值超标、亚硝酸盐残留量、蛋白质、脂肪)检测机理与方法研究,通过其内部物理成分信息及外在特征信息检测,揭示肉品光谱信息及图像信息变化规律。研究手段采用将表征肉品变化的关键有效信息进行提取,以国家肉品生化检测标准建立高光谱标准模型,在此基础上建立高光谱及显微图像特征信息优化检验模型。通过人工智能多信息融合实现肉品特征信息聚类、分类模式识别,以获得与国家肉品生化检测相一致的高光谱检测标准。实现快速检测肉品品质及判断是否可以放心食用是研究的目的。特色与创新是将高光谱技术、人工智能理论应用于肉品快速检测,对推动现代信息技术在食品安全检测领域应用具有科学研究意义。

英文摘要: At present, bacon and sausage quality detection method include sensory detection and micro physical detection at home and abroad. but It is influenced by subjective factors. Detection is complex and time is long, cannot be detected quickly spot. Therefore, innovation put forward to infrared spectroscopic and microscopic image data fusion on Bacon and sausage quality(Including volatile basic nitrogen TVB-N, oxidation degree, the total number of colonies, acid value and peroxide value exceed the standard, the nitrite residue, TBA protein, fat) Study on detection mechanism and method. Through its internal information and external physical components of feature information detection, revealing the Bacon and sausage spectral information and micro image.The research method is Extraction of Bacon and sausage quality changes in a variety of effective information, with the national meat quality and biochemical criteria established the standard model, built on this foundation has a spectral characteristic, microscopic image information optimal inspection model.Through artificial intelligence multi information fusion of meat characteristics information clustering, classification pattern recognition, to obtain and the national Bacon and sausage biochemical detection of consistent standards, thereby enabling rapid discrimination of Bacon and sausage quality and to determine whether they can rest assured that food.The project features and innovation is the photoelectric information technology, artificial intelligence, pattern recognition theory applied to rapid detection of food, this scientific research significance is on promoting the development of modern information technology in food safety detection and applications.
