中文摘要: 菜用大豆在低温贮运过程中易发生劣变,严重影响其独特的风味品质,极大地限制了它的市场辐射范围及占有期。因此,寻求有效延长采后保鲜期的贮运新方法是目前菜用大豆产业急需解决的瓶颈问题。本项目旨在以1H NMR为技术平台,采用代谢组学的研究方法,通过对不同低温贮藏模式下菜用大豆样品代谢物的分析,对应于豆粒体内生化代谢体系网络模型的理化、分子生物学等检测指标,从代谢物中筛选与品质劣变有相关性的代谢物靶标和代谢轮廓。以代谢物靶标分析和代谢轮廓分析为指导,开展外源物结合低温处理菜用大豆特征性小分子物质的追踪与筛选,研究菜用大豆品质变化与调控作用机理,建立从采后复杂的"黑色"或"灰色"多组分体系中筛选与品质密切相关的物质新模式,为进一步开发保鲜新方法奠定理论基础。

英文摘要: Vegetable soybean is prone to deterioration during cold storage, which has seriously affected their unique flavor qualities, and greatly limited the scope of its markets and tenure. Therefore, seeking new ways to effectively extend the shelf life is currently pressing of vegetable soybean industry bottlenecks. This project aims to base on 1H NMR technology platform, use metabolomics research methods, through metabolite analysis of the different varieties samples under low temperature storage mode, corresponding to physico-chemical, biochemical and molecular biology detection of the metabolism system model in plant, so as to screen metabolites target and metabolic profile that is relevant with quality deterioration of vegetable soybean. Guided by the metabolite target analysis and metabolic profiling, small molecular characteristic substances of vegetable soybean treated on exogenous substances combined with low-temperature for tracing and filtering were studied to illuminate quality change and control mechanism, and to establish new mode that filters the substance closely related to quality from the complex "black" or "grey" multicomponent system after harvest.The results could provide theory foundation for the further development of the new method for preservation.
