中文摘要: 玉米深加工产品已广泛应用许多行业,但对玉米加工副产物的回收利用、新功能性发掘的基础研究还比较少,副产物高值化研究还很薄弱。玉米加工副产物的深度开发利用研究,对提高玉米加工产业的社会及经济效益,提高玉米加工综合利用的技术水平有重要意义。本项目以玉米加工主要副产物玉米麸质中的玉米纤维胶阿拉伯木聚糖为研究对象,以多重功能性发掘和溶液流变学性质研究为重点,开展结构和功能关系及其多重功能性的系统基础研究,利用高分子物理化学和流变学多学科研究手段,阐明玉米纤维胶分子结构参数-流变学性质-功能特性之间的关系和规律,揭示玉米纤维胶的协同增粘机理,发展协同增粘理论,并研究其对乳蛋白胶体的稳定性和稳定机理,为玉米纤维胶的多重功能性应用提供理论基础和科学依据,以期为玉米加工副产物玉米麸皮的综合利用提供一条新的途径。

英文摘要: Corn products by deep processing have been widely used in many industrial fields, however, basic studies on the recycles and utilization, discovery of novel functionalities of the by-products of corn processing are scarce, and corresponding studies on the high value-added by-products are relatively unsubstantial. The research on the deep exploration of the application of the corn by-products is essentially important not only to increase the social and economic benefits of the corn processing industry but also to improve the technologies on the comprehensive utilization of corn. This proposal focuses on the investigation of the multiple-functionalities and rheological behaviour of corn fiber Arabinoxylan gum from the corn fiber contained in maize bran, a main corn processing by-product, emphasizing the relationship between functions and structures of corn fiber gum and its multiple-applicability. The multidisciplinary researching methods including polymer physico-chemistry and the rheology will be used to clarify the rules and relationships of structure parameter - rheological properties - functional characters.
