中文摘要: 本申请以炭黑曲霉产OTA毒素过程中释放的特征挥发性伴随物与OTA积累的关联性为线索,旨在利用特征性挥发性成分,实现OTA毒素积累的早期、快速识别与检测。项目研究拟以敲除pks基因后不产毒素的突变体菌株为对照,采用SPME-GC/MS方法对产毒菌株释放的挥发性伴随物进行捕集、鉴定,结合PCA及多元回归分析方法探明其特征性成分及其与产毒菌生物量、OTA积累量之间的关联性,构建OTA产毒菌株侵染预测模型,并引入电子鼻人工智能技术,建立OTA积累量的识别模型,开展葡萄干中OTA积累的快速检测以及预警研究。在上述研究基础上,形成两方面的成果:1)实现食品加工贮藏过程中真菌毒素积累的人工智能化监控及相关食品安全的早期预测、预警;2)以挥发性伴随物作为间接信号和指标,探索真菌毒素监控的一种新的研究思路和方法。

英文摘要: In order to realize the early recognition of OTA accumulation, the characteristic volatile organic compounds will be determinated by the chemistry and chemometrics method in this program which release during Aspergillus carbonarius growing and OTA forming stage. The volatile organic compounds will be detected by SPME-GC/MS using the △pks mutant as the control strain. The relationship among the biomass, volatile organic compounds and OTA accumulation will be probed with PCA and multiple regression analysis. E-nose technology will be used and the recognition model will be established for rapid detection and early warning of OTA in raisins. The whole proposal will achieve two goals: 1) realize the early recognition of mycotoxin during food processing and storage with an artificial intelligence technology; 2) explore a new idea and method on monitoring mycotoxin by detection volatile compounds.
