中文摘要: 快速准确地检测酿酒葡萄成熟期花色苷含量和成分的动态变化,对于确定酿酒葡萄的成熟度,选择最佳采收期有着重要的指导意义。为了克服当前化学检测方法存在周期长、成本高和污染环境的缺陷,并针对现有光谱研究难以全面反映成熟期间花色苷变化的状况,本项目拟基于近红外高光谱成像技术检测成熟期果皮中的花色苷含量和成分变化,采用多元统计分析等模式识别方法,从三个方面开展研究:酿酒葡萄成熟期果皮高光谱数据降维;酿酒葡萄成熟期不同位置及朝向果穗的花色苷含量变化预测模型;酿酒葡萄成熟期花色苷组成变化检测模型。本项目的研究成果将为酿酒葡萄成熟期果实的花色苷含量及其成分变化的快速无损检测提供新的理论和方法支持,为开发酿酒葡萄花色苷快速检测仪器提供特征波段,有助于葡萄酒生产中提取稳定的化学和生物活性原材料。

英文摘要: Rapid and accurate detection of anthocyanin's content and element of wine grape's skin during ripening is important to determine the ripening degree and select the best picking time. To overcome the defection of current chemical detection method with long time, high cost and pollution, this project aims at rapid detection of anthocyanin content and composition based on near infrared hyperspectral imaging technology and multivariate statistics analysis. The research will use the method of multivariate statistical analysis and focus on three aspects, which are dimensionality reduction method of hyperspectral data, prediction model of skin anthocyanin content of bunch at different location and orientation and skin anthocyanin element during ripening of wine grape. The research achievement of this project will provide new detection method for anthocyanin changes and extract feature bands for rapid detection device of anthocyanin content, and it will helpful for getting stable material for wine production.
