中文摘要: 激素滥用是目前食品生产过程中普遍存在的问题,过量使用激素会给人体健康和社会发展带来许多问题。由于激素与生物体的相互作用机制研究不够深入,激素检测步骤繁琐、成本高,因此到目前为止激素仍未被列入强制检测项目。开展激素对生物体影响的研究,寻找廉价、灵敏度高的激素传感器能够为食品安全提供相应的技术支持。本项目拟以生物体抗氧化防御系统中的抗氧化酶为主要指示物,将纳米复合材料、电化学传感以及分子对接模拟等有机结合,研究激素分子对抗氧化酶活性影响的因素及量效关系,揭示激素分子与抗氧化酶之间的作用模式、结合位点及化学本质,基于激素对抗氧化酶的抑制或者激活效应建立激素测定的电化学方法,研制简单、可携、灵敏度高、分析速度快、能在体检测的激素电化学传感器。本课题的开展能为激素在食品中的合理使用提供理论依据,同时能为激素的毒理作用及致病效应等的研究提供新的思路和方法,在食品安全控制等方面具有重要的意义。

英文摘要: The abuse of hormone during the food production process has caused many serious problems for the health of the people and the development of the society. Hormone detection is still not the compulsory test item in the food testing because the influence of hormone has not been deeply understand and the Hormone detection process is complex and the detection cost is high. Studying the impact of Hormones on organisms and looking for inexpensive, high sensitivity hormone sensors can provide appropriate technical support for food safety.This project intended to use antioxidant enzymes as indicators to study the influence of the hormone on the organism by combining the nanocomposites technology, the biosensor technology and the molecular docking simulation. We will study the factors that influence the activity of enzymes and obtain dose relationship between Hormone and the enzymes' activity. By using electrochemical and spectrometric method, we will reveal the interaction model, the binding site and the reaction mechanism between Hormones and enzymes. Based on the inhibition or activation effect of Hormones on the activity of the enzymes, the biosensor for Hormone detection can be constructed. Such biosensors are simple, portable and can be used for in vivo detection. This project will provide the theoretical basis for
