中文摘要: 核磁共振(NMR)技术作为当前植物代谢组学研究的核心技术,为研究葡萄酒发酵过程中生物体整体细胞系统的动态代谢变化机理,特别是对内源代谢、遗传变异、环境变化乃至各种物质进入代谢系统的特征和影响都具有重要作用。本项目拟在前期研究的基础上,采用NMR植物代谢组学研究方法和实验方法相结合的策略,研究对我国不同原产区地域主栽酿酒葡萄品种原料与干红、干白葡萄酒,建立葡萄酒NMR指纹图谱数据库,以及葡萄酒代谢组学数据的模式识别分析体系,系统地研究我国主要产区原产地域产区葡萄酒代谢组学基础及其产物差异变化特点。对一些特征性成分进行分离鉴定,并探讨其产生机制和对质量的影响。为葡萄酒产地、年份地理标志认证以及掺假等质量监控提供理论依据和技术支持。

英文摘要: Nuclear magnetic resonance ( NMR ) as the current plant metabolomics research core technologies has an important role, for the research in the process of wine fermentation organisms whole cell system dynamic metabolic evolution mechanism, especially on the endogenous metabolism, genetic variation, environmental variation and various substances into the metabolic system characteristic and the effect.The project plans on the basis of previous research, using means of modern NMR techniques based metabolomics studies method and experimental method of combining strategy, research on the different varieties of grapes and wines in geographic origin of China's different regions , the establishment of wine NMR fingerprint database, as well as wine metabolomics data analysis of pattern recognition system, a systematic study of in the main producing areas of geographical origin of wine producing areas of metabolomics basis and difference change characteristics. some characteristic constituents will be identified, and to explore its mechanism and effect on quality of wines. For wine, vintage geographical indications certification as well as adulteration and quality monitoring to provide the theory basis and the technical support.
