中文摘要: 食品安全是我国当前面临的一个严重问题,为此急需建立简单、快速、准确、低廉的分析方法用于食品中有毒有害化合物的检测。本课题将通过各种物理手段对不同无机、有机化合物修饰后色谱纸表面性能的表征,结合纸喷雾电离源的吸附保留和电离特征,研究食品中不同极性有毒有害污染物在纸喷雾电离源基质-色谱纸上的保留特性和电离规律,特别是强极性化合物,探讨特性参数与电离效率之间的关系,进而研制出一种对食品中不同极性有机污染物具有独特电离性能的纸喷雾基质,并建立相应的纸喷雾电离源-商品质谱仪、纸喷雾电离源-微型化质谱仪等多层次检测配套的快速检测方法,这将为食品中有机污染物快速检测奠定方法学的基础,同时也为材料学与质谱分析的有力结合提供理论依据和实验基础。

英文摘要: Food safety has been into a serious problem in our country. So it is urgent to develop some simple, rapid, accurate and low-cost techniques for determination of poisonous and hazardous pollutants in foodstuffs. This project will focus on development of a novel paper spray ionization technique for rapid determination of different contaminants in foodstuffs. The paper matrix for paper spray will be modified with different inorganic and organic compounds. A special paper matrix will be screened by investigation of the retention behavior and ionization law of poisonous and hazardous pollutants in foodstuffs, especially the compounds with strong polarity, and the relationship between the characteristic parameters and ionization efficiency via different physical techniques. In combining the screened paper matrix with mass spectrometry, some multiform analysis methods, such as paper spray-commercial mass spectrometer, paper spray-miniature mass spectromter and others, will be developed to analyze the pollutants in different foodstuffs. This study will offer a promising potential for separation and analysis of different poisonous and hazardous pollutants in foodstuffs, especially strong polar compounds, and provide an important theoretical and experimental basis for combination of material science and mass spectrometry
