中文摘要: 在前一个国家自然科学基金小额探索项目的基础上,通过对纤维分子的改性,将加工后的菠萝余渣制备成环境敏感型水凝胶,包埋和固定化茶多酚表没食子儿茶素没食子酸酯(EGCG)、胰蛋白酶等在食品工业中有重要应用价值的生物活性成分,分析其缓释模型和反应动力学。创新性研究内容包括:一、提取色素含量低的菠萝皮渣纤维素,通过离子液体溶解和疏水改性、交联剂及致孔剂作用,制备出具有一定响应范围的pH敏感型、温度敏感型和超声波型敏感型的水凝胶并进行特性表征;二、以EGCG、胰蛋白酶为活性成分代表,利用分子印迹技术和添加剂的影响,研究水凝胶对活性成分的包埋效果;三、研究环境敏感型水凝胶中活性成分的控制释放模型和反应动力学;四、分析EGCG缓释后对胆酸盐的结合能力。本项目对引导农产品高值化利用有两个层面的意义:一是探索果蔬加工余渣的改性及高值化利用的理论和技术;二是获得所制备水凝胶中活性成分的包埋、缓释模型和反应动力学

英文摘要: Abstract:This project focusese on preparation of environment-sensitive hydrogels and its controlling release of functional components based on modification of pineapple peel. The high lights of this project involve: 1. Preparation of pH-sensitive hydrogel,temperature-sensitive hydrgol and ultrasonic-sensitive hydrogel from pineapple peel fibre; 2. embedment of tea catechin (EGCG) and immobilization of trypsin in the prepared hydrgels; 3. Characterization on the prepared hydrogels and additive effect; 4. EGCG is used as the printing molecule to prepare molecularly imprinted hydrgel; 5. Study on the controlling release of EGCG from the hydrogels and the reaction kinetics of the immobilized trypsin on the hydrogels; 6. Evaluation on binding capacity of EGCG released from the hydrogels with bile salts in vitro. The above results will benefit to find the way to reuse the peel residue of processed pineapple and clarify the mechanisms of controlling release and the reaction kinetics of some functional components from the prepared hydrogels.
