中文摘要: 餐饮废弃油脂掺伪食用油的有效检测是当前迫切需要解决的食品安全问题之一。申请者的前期研究结果表明餐饮废弃油脂在低场核磁检测中存在特征响应,但不能确定是何种油脂降解产物产生的特征响应。本项目拟通过对餐饮废弃油脂形成、精炼过程中油脂降解产物变化规律及其低场NMR检测特征响应规律的基础研究,筛选特定的特征油脂降解产物,经分离纯化后对其低场核磁检测特异性进行验证,进而建立低场NMR特征响应与特征油脂降解产物间的数理模型,并以具有代表性的真实餐饮废弃油脂的特征降解产物检测结果进行验证,确定能够有效反应油脂劣变程度并产生特征低场NMR响应的油脂降解产物。本研究是建立标准食用油及餐饮废弃油脂低场NMR特征数据库的必要前提,本项目的实施有望为餐饮废弃油掺伪食用油的低场NMR快速检测方法提供可靠的理论依据。

英文摘要: With the increasing awareness of food safety and quality, the authentication of edible vegetable oils adulterated with waste cooking oil has been a research focus. Our preliminary result indicated that a characteristic response can be detected in the LF-NMR transverse relaxation (T2) map of the waste cooking oil.Further research should be conducted to investigate the correlations of the LF-NMR reponse with the compounds formed in the waste cooking oil. In this proposal, the evolution of oil composition and the corresponding LF-NMR responses during the formation and refining process of waste cooking oil will be studied, so as to screen out the characteristic compounds. After isolation and purification, the specificity of the characteristic compound will be verified. The relationship between the LF-NMR response and the compounds should be investigated. Then the characteristic compound content of representative waste cooking oils will be analysed, and used to verify the results simulated from the LF-NMR data. The result of this research is a necessary step for the establishment of LF-NMR characteristic database of calibration and waste cooking oils. The implement of this project would provide a theoretical basis for the rapid authentication of edible vegetable oils adulterated with waste cooking oil by LF-NMR.
