中文摘要: 我国蜂蜜品种和数量繁多,具有较高的营养价值和市场需求,产量居世界首位,而全球蜂蜜市场存在品种良莠不齐,高价单花蜜中添加廉价蜜,不同单花蜜功效差异不明确等问题。目前国内外对不同蜜源和生长环境的单花蜜特征标志物和活性成分的识别尚不明确,国内运用高通量代谢组学方法分析不同单花蜜的研究基本处于空白。. 本项目以我国主产特色单花种蜂蜜为研究对象,一通过NMR和UPLC-MS方法构建蜂蜜的全成分代谢指纹谱和酚类代谢轮廓谱,系统开展特征标志物的识别研究;二基于酚类代谢轮廓谱,结合单花蜜细胞水平和体外化学分析法相结合的抗氧化活性评价数据,及DPPH柱前衍生的在线分析鉴定,构建单花蜜酚类组分抗氧化活性的谱效关系,为我国不同单花蜜的全面质量评价建立有效方法和预测模式,为我国单花蜜的品质分析、健康评价与提高蜂蜜市场竞争力提供技术支持。

英文摘要: The productivity and quantity of honey in China are in the leading position in the world, with high nutritional value and market demand. With the globalization of the honey market,it's essential to prevent the fraudulent marketing of adulterated or immature honey. Currently, the study on the identification of reliable chemical markers indicating floral and/or its geographic origin of honey, as well as active compounds is still ambiguous. . In this research, based on plant metabolomics we plan to develop analytical methods that NMR spectroscopy and an UPLC-MS for metabolic finger-printing, metabolite profiling of phenols, to identify the discriminatory compounds among different honey types according to chemometrics methods. Using whole chromatographic profiles and measurements from cellular antioxidant activity and antioxidant experiments of chemical analysis as input to provide spectrum-effect relationship. A new method based on DPPH spiking test combined with UPLC-MS was developed to screen and identify the antioxidants in honey. . The research is aim to establish effective method and prediction model for comprehensive quality evaluation of different unifloral honeys, which provide technical support for quality analysis, health assessment, to enhance the market competitiveness of honey in our country.
