中文摘要: 自由基清除肽(Radical scavenging peptides, RSP)是一类重要的生物活性肽,揭示其构效关系及清除自由基的具体作用机制,对于生物活性肽的基础研究和指导开发RSP食品及药物都具有重要意义。结合已有文献和我们前期研究工作(Yu et al., Eur Food ResTechnol, 2008, 226: 415-421)来看,目前在RSP清除自由基的构效关系研究上,虽已揭示了部分与活性相关的氨基酸,但尚未确定出活性基团;在其清除自由基的作用机制方面,缺乏定量化表征研究。在本课题中,我们将首次通过量子化学计算,确定RSP结构中与清除自由基活性相关的主要基团,并从量子化学角度对RSP直接清除自由基的两种作用机制进行定量化描述。项目完成后将确定RSP中的活性基团,并阐明RSP清除自由基的具体作用机制。其结果将有助于指导高活性RSP的分子设计及其在实践中的生产应用。

英文摘要: Radical scavenging peptides( RSP) are an important group of bioactive peptides. Revealing the structure-activity relationship and the action mechanism of the RSP are significant to both the basic research and practical application of bioactive peptides. From others and our previous research (Yu et al., Eur Food ResTechnol, 2008, 226: 415-421), the main active groups of RSP were still not been verified. And there are still lack the quantitative description of the action mechanism of RSP. In this project, for the first time, the chemical groups of RSP will be verified by methods of quantum chemical calculation. And the action mechanism which are related with the free radical scavenging activity of the RSP will also be described from the quantum chemical point of view. Achievements of research results will validate the key groups and reveal the specific mechanism of RSP. The results will also be help for the active RSP molecular design and its production and application in practice.
