中文摘要: 真菌毒素是影响食品安全的重要因素之一,近年来,由真菌毒素引起的食品安全问题在世界范围内日益突出,严重威胁人类和动物的健康与生命安全。传统的真菌毒素检测方法往往比较繁琐,检测周期较长,样品预处理过程繁琐耗时,需要专业的操作人员等,在一定程度上限制了它们在真菌毒素检测中的实际应用。因此,建立简便、高灵敏度、高选择性,可用于食品及相关制品等实际样品中真菌毒素检测的方法,对于真菌毒素的有效控制,保障食品安全及人类健康具有重要意义。本课题拟结合当前真菌毒素研究热点和前期研究基础,以常见的污染食品及食品原料并与人类健康关系非常密切的真菌毒素-赭曲霉毒素A为研究对象,探讨以无标记型核酸适配体作为识别元件,建立低成本、高灵敏度的真菌毒素检测控制的有效方法。

英文摘要: Mycotoxin is one of the important factors influencing food safety, in recent years, food safety problems caused by mycotoxin is becoming increasingly prominent all over the world and seriously threaten the healthy and life safety of human and animals. The traditional methods for mycotoxin detection tend to be complicated, tedious, pretreatment time consuming and professional staff is needed. These deficiency affect the practical application of these method to some extent. Therefore, establishing simple, high sensitivity, high selectivity method and suitable for mytoxin detection in food and food products is of great importance on mycotoxin effectively control, ensure food safety and human heathy. In this research, combining the present research hotspot with our early research, we select ochratoxin A, which is a common mycotoxin contamined food and food products and have close relationship to human healthy, as research object and utilize label-free aptamer as recognition element to establish low cost, high sensitivity methods for mycotoxin control.
