英文摘要: The study will investigate the variation regulations of the dielectric properties of a semi-hard ripening cheese and the correlations of the dielectric properties with ripeness, quality characteristics and rheological properties of the cheese. The study contents include the permittivity variations with ripeness, the correlations of the permittivities with sensory texture properties, the correlations of the permittivities with static and dynamic rheological properties, and the permittivities with water activity and pH values. The purpose of the study is to seek a new prediction method of ripeness and quality characteristics of the cheese by applying its dielectric properties. It has a certain practicability for simplifying presently used methods which are complex and time consuming in process, and it has a certain scientific values for lays a groundwork for future researches of cheese dielectric properties.
