中文摘要: 油脂是人类的主要食物和生命代谢必不可少的营养物质。油脂中的亚油酸甘油三酯在高温加热过程会发生异构化,产生一系列能够引发心血管疾病的反式脂肪酸。目前关于亚油酸甘油三酯热致异构化的反式产物及其形成机理尚不明确,特别是异构产物的结构及特性、温度与异构化反应速率常数的量效关系,以及异构化反应中过渡态分子结构及其作用等科学问题亟待深入研究解决。为此本研究将利用Ag-TLC法、ATR-IR法和GC-MS法对热致异构化产物进行分离、结构鉴定,并研究各产物对内皮细胞的损伤;运用反应动力学和密度泛函理论计算异构化反应速率常数、反应活化能和反应过渡态,从理论上揭示热致异构化的反应途径;探讨影响因子与异构化反式产物的关系,提出控制反式产物生成的有效措施。

英文摘要: Oil is a kind of main food and necessary nutrional material for human body.Thermal processing with high temperature for linoleic triglyceride in oil can easily induce the formation of trans fatty acids,which can casue cardiovascular disease. At present it is not clear of the type of products and the mechanism of thermal induced trans linoleic acids,especially the structure of the trans products, the relationship between temperature and reaction rate and the structure and function of transtion in the isomerization reaction. Therefore,This project would be focused on the following research: We will make sure the type of isomerization products by Ag ion-TLC, ART-IR and GC-MS methonds and the bad effect of each trans products on endothelial cell. We will aslo study effect of the kinetics of the isomerizaiton reaction and density fuctional theory of quantum chemistry would be used to describe the mechanism.We will study the key influencing factor of the isomerization to discuss the effective methods to control the amounts of trans linoleic acids.
