中文摘要: 本项目将提出一种新的抗氧化容量检测方法-光电化学抗氧化容量检测法,这一研究属于具有完全自主知识产权的创新性工作,目前尚没有类似技术原理的传感器及分析仪器问世。研究中首次将光电化学技术引入抗氧化容量的检测,所建立的方法符合理想的抗氧化剂检测方法标准。本项目将分别从总抗氧化能力测定和抗氧化指纹图谱分析两个方面开展研究,结合光电化学手段开发生物抗氧化容量传感器。这种基于具有不同能级半导体材料的光电传感器可实现总抗氧化容量和抗氧化指纹图谱分析:选择合适的半导体并对其进行修饰,其在可见光的辐射下产生具有不同氧化能力的空穴及相关自由基,能够对具有还原能力的抗氧化剂进行响应并测定,并实现抗氧化指纹图谱分析。利用这种生物抗氧化剂传感器,可实现对食品中抗氧化剂抗氧化能力的全方位、多角度测定和分析。

英文摘要: A new antioxidant capacity detection method has been developed here, in which photoelectrochemistry technique is introduced for the first time. This research is a completely original work with independent intellectual property rights, and there are currently no available sensors based on similar technical principles nor concerned analytical instruments till now. Such an established approach is well in accordance with the ideal standard detection methods for antioxidant capacity assay. In this research, investigations upon determination of global antioxidant capacity and analysis of antioxidant fingerprint spectra will be carried out. Combined with electrochemical and photoelectrochemical techniques, two kinds of antioxidant capacity sensors will be studied and performed. This is a kind of photoelectrochemical antioxidant capacity sensor based on certain semiconductor materials with different energy levels and theit simulation of human endogenous free radicals. By applying such a sensor, global antioxidant capacity assay and analysis of antioxidant fingerprint spectra will be achieved. In this study, appropriate semiconductor materials should be selected and then further modified. Under visible irradiation, holes (h+) with different oxidative ability and conerned free radicals will generated, which can further reduce antioxidants to realize antioxidant capacity determination. Antioxidant fingerprint spectrum analysis can also be performed upon such approach. These two kinds of antioxidant capacity sensors will be excellent candidates for global antioxidant capacity assay and analysis in food samples.
