中文摘要: 淀粉纳米颗粒的聚集态结构将影响其力学性能和溶胀行为,对颗粒在纳米复合材料、药物载体和吸附剂等方面的应用至关重要。本项目以纳米沉降法制备的直链淀粉纳米颗粒为研究对象,系统深入地研究纳米尺度空间内直链淀粉分子链聚集态结构形成和演变的规律及其影响因素。通过调节和控制颗粒的制备条件、直链淀粉的分子链长度和分子量分布以及添加剂(包括脂质、表面活性剂和反应试剂)的品种和含量,揭示影响直链淀粉纳米颗粒聚集态结构的因素及其作用机理;通过直链淀粉纳米颗粒回生特性的研究,阐明在纳米尺度空间内,温度、湿度(水含量)、时间、直链淀粉的分子链长度和分子量分布以及添加剂品种和含量对直链淀粉纳米颗粒聚集态结构演变的影响及其作用机理;探索通过调控制备条件、材料组成以及后处理过程构筑和调节直链淀粉纳米颗粒聚集态结构的技术方法,为设计、构筑和优化淀粉纳米颗粒的聚集态结构,进而优化其性能或产生新功能提供理论指导和技术支撑。

英文摘要: Aggregate structure of starch nanoparticles can affect their mechanical properties and swelling behavior which are very important for the applications of starch nanoparticles in nonacomposite, drug delivery and adsorbent. This project will investigate formation and evolution of aggregate structure in the amylose nanoparticles prepared by nanoprecipitation. Through controlling the preparation conditions of the nanoparticles, the chain length and molecular weight distribution of amylose as well as additives (including lipids, surfactants and reaction reagents), the factors and their mechanisms which influence the formation of aggregate structure in amylose nanoparticles will be revealed. By investigating the retrogradation behaviors of the amylose nanoparticles, the effects and mechanisms of temperature, humidity (water content), time, chain length and molecular weight distribution of amylose as well as additives on the evolution of aggregate structure in amylose nanoparticles will be clarified. This project will also explore novel methods to construct and adjust aggregate structure of amylose nanoparticles by regulating preparation conditions, formulations and post-treatments.
