中文摘要: 由于我国农业环境的恶化,农产品污染已成为我国城市人体健康的重大威胁。本研究应用以生理学为基础的离体胃肠模拟技术(In Vitro法),评估南方主要蔬菜中重金属对人体的生物有效性和潜在生物毒性,研究不同烹饪方法以及不同食物组合对蔬菜重金属毒性的影响;并以动物活体试验(In Vivo法)验证分析In Vitro方法对蔬菜重金属生物毒性的评估结果,评估重金属在动物体内实际的被吸收利用程度和生物有效性。结合本地居民蔬菜消费量、蔬菜重金属生物有效性等,估算通过蔬菜消费进行人体消化道的重金属暴露剂量,全面评估本地居民通过消费蔬菜而产生的重金属受害风险度,排列出南方常见蔬菜的重金属毒性大小,提出通过烹饪习惯与食物结构的适度调整降低重金属受害风险的饮食方案。

英文摘要: The consumption of foodcrops produced in contaminated soils is a principal factor contributing to human metals exposure. Potential health risks to humans and animals from consumption of crops can be due to heavy metal uptake from contaminated soils via plant roots as well as direct deposition of contaminants from the atmosphere onto plant surfaces. The environmental risk by consuming soil and contaminated vegetables can be assessed by measuring their bioaccessbility. This research proposal will use the Physiologically Based Extraction Test (In Vitro) to determine the oral bioaccessibility of heavy metals in contaminated vegetables. The present study aimed to investigate the influences of different cooking methods and different food combination treatments on the bioaccessibility concentrations and potential biological toxicity of heavy metals. In Vitro test is used to verify the results of the In Vitro assays, and to assess actual toxicity of heavy metals to animals. We linked daily intake of vegetables and bioavailability of heavy metals in a unified approach (Target Hazard Quotients established by USEPA) to develop accurate and reliable methods for risk assessment of metal-contaminated vegetables.
