中文摘要: 粮食储运过程易受真菌毒素污染,以黄曲霉毒素的危害最大,严重威胁人畜健康。然而,目前的真菌毒素检测方法存在过程繁琐、时效性差或灵敏度低等缺点,难以真正满足现场快速准确检测的需要,日益成为制约粮食质量安全的瓶颈。针对这一问题,本项目拟以接种产黄曲霉毒素真菌菌株的稻谷在储藏中所产生的特征气味信息为切入点,重点研究不同储藏条件下稻谷挥发性成分与黄曲霉毒素的相关关系模型,揭示黄曲霉毒素的指示性气味成分;分析黄曲霉毒素特征气味成分与电子鼻各传感器信号的响应关系,建立黄曲霉毒素的定性与定量分析模型,阐释电子鼻技术用于黄曲霉毒素检测的内在机理。本项目将为从气味信息入手,最终实现粮食储运过程中真菌毒素污染的在线监测提供理论和技术基础。

英文摘要: Grain is vulnerable to mycotoxin contamination during storage and transportation, and suffers the most from aflatoxins, which causes a serious threat to human and animal's health. However, current methods for mycotoxin determination are usually laboratory-intensive, time-consuming or with low sensitivity, and could not fulfill the need for on-site rapid and accurate testing, emerging as a bottleneck for grain quality and safety. Concerning this issue, this project intends to use volatile odor information arises in rice inoculated with aflatoxigenic strains during storage as the piontcut, detailed study the correlation model between volatile components of rice and aflatoxins under different storage conditions. Characteristic odor components of aflatoxins will be revealed. The correlation between indicative odor components of aflatoxins and sensor signal of electronic nose will also be analyzed. Finally, qualitative and quantitative models for aflatoxins determination based on electronic nose will be established and the results will be interpreted scientifically. This project will provide theoretical and technical foundation for on-line monitoring of mycotoxin contamination in grain storage and transportation by means of volatile odor information.
