中文摘要: 贝类具有很强的重金属富集能力,富集的有害重金属因具有隐蔽性、长期性、累积性等特性,可通过食物链的形式进行传递,严重威胁着人类健康。贝类的重金属富集信息的快速准确获取是保证贝类食品安全的关键技术之一。常规获取重金属富集信息的方法耗时费力、操作复杂且只能进行抽样检测,难以实现大规模的实时信息获取。振动光谱技术因具有简便、无损、快速等特点,被誉为发展最快的食品品质检测技术之一。本项目以典型沿海养殖贝类-泥蚶和缢蛏为研究对象,以铜、锌、铅、镉四种典型重金属离子为分析指标,通过红外和拉曼两大振动光谱技术获取重金属污染所引起贝类的分子结构的变化信息,充分利用两大振动光谱所反映的物质结构和含量信息各不相同的优势,对其进行融合与挖掘,弥补独立谱各自缺陷,提高分析精度,并建立定量关系模型,实现贝类的重金属富集信息的准确、快速地检测。项目的实现对丰富贝类重金属检测手段,保障我国贝类食品的质量安全具有重要意义。

英文摘要: Shellfish has strong heavy metal accumulation ability.Accumulated heavy metals in shellfish have the features of concealed, chronicity, and cumulative. Heavy metal is responsible for causing adverse effect on human health through food chain contamination.Rapid detection of heavy metals in shellfish is the key point for ensuring the safety of shellfish. Regular accesses to the heavy metals in shellfish are time-consuming, complex, and destructive, and are difficult to achieve large-scale and real-time assessment of information. Vibrational spectroscopy has advantages of being non-destructive and rapid, and is known as one of the emergent food quality detection technologies. In this project, two typical vibrational spectroscopy, infrared spectroscopy and Raman spectroscopy, will be applied for rapidly and non-invasively detecting four typical heavy metal ions of copper,zinc,lead,chromium in two typical coastal aquaculture shellfish of tegillarca granosa and sinonovacula constricta. The change of molecular structure caused by the pollution of heavy metals will be measured by using two spectroscopy techniques.
