中文摘要: 二氧化钛(TiO2)是一种重要的食品添加剂。由于其具有优良的增白与提色能力,近年来食品中TiO2非法添加现象逐渐增多。食品级TiO2本身无毒,但是添加TiO2的食品在处理过程中将产生纳米二氧化钛颗粒(NP-TiO2)。毒理学实验表明,NP-TiO2会造成孕鼠妊娠障碍,并且阻碍幼鼠神经发育,存在潜在的生物安全风险。本研究将考察我国食品中NP-TiO2 的存在情况,并对我国食品中NP-TiO2的膳食暴露风险进行评估。本研究将首先基于拉曼光谱技术,建立食品中TiO2的快速检测方法,对市售食品中TiO2添加情况进行筛查;基于浊点萃取技术,场流分级串联电感耦合等离子体质谱技术,建立食品中痕量NP-TiO2定性与定量分析方法。考察TiO2添加食品中NP-TiO2的粒径分布特征与浓度水平。根据食品消费情况等相关数据,建立NP-TiO2的膳食暴露模型,评估我国居民膳食中NP-TiO2的暴露水平。

英文摘要: Titanium dioxide (TiO2) is a common food additive. Due to its outstanding properties, the illegally addition of TiO2 in food was gradually increased in recent years. Food grade TiO2 is non-toxic, but it will generate titanium dioxide nano-particles (NP-TiO2) during the manufacture process. According to the toxicology experiments, the NP-TiO2 showed toxicity toward animal. The NP-TiO2 causes pregnancy complications when injected intravenously into pregnant mice. Mice treated with NP-TiO2 had smaller uteri and smaller fetuses than untreated. The aim of this study is to establish the qualitative and quantitative methods, to teat the presence of TiO2 and NP-TiO2 in food, and inspect the concentration and particle size of NP-TiO2, finally carry on the dietary exposure assessment. Using Raman spectroscopy, rapid detection method will at first established to screen the presence of TiO2 in food. Then the NP-TiO2 in food will be extracted with cloud point extraction, and determined by field-flow fractionation coupled with inductively coupled plasma mass spectrometry. After that,the particle size distribution and concentration level of NP-TiO2 in foods will be analyzed.
