中文摘要: 为了解决目前水产品冷链信息管理中缺乏对冷链环境信息与水产品品质信息的关联性综合分析的问题,本研究以水产品冷链为研究对象,在充分分析冷链的温度因素对水产品品质影响的基础上,利用时间-温度传感器采集技术、数据挖掘与融合技术、粗糙集算法等方法,建立事件与状态集合对水产品冷链信息进行描述,构建水产品冷链安全的决策支持模型。从理论上分析水产品冷链的温度环境对水产品品质的影响,探讨水产品品质的衰变机理。根据环境温度的波动特点,将水产品冷链环境分为恒温、连续波动、不连续波动的温度环境,并分别建立不同温度波动条件下的水产品品质评价模型。在充分分析水产品冷链温度环境特点的基础上,对冷链阶段的温度环境介质进行分类,并根据不同的环境介质,对时间-温度传感器进行选择。

英文摘要: The lack of relevance analysis about the cold chain environment information and aquatic product quality information was existed in the cold chain information management of aquatic product. In order to solve such a problem, the aquatic product cold chain is to be chosen as the research object in this research. A method which used the event and estate aggregate to describe the aquatic product cold chain information is to be presented. And the decision support model of aquatic product cold chain safety is to be built in this paper. In this research, the collection technology of time-temperature sensor, data mining and fusion technology and rough sets algorithm are to be used.In this research, the influence about temperature environment of aquatic product cold chain on the aquatic product quality was analyzed theoretically, and the decay mechanism of aquatic product quality is to be explored. The cold chain environment of aquatic product was divided into the constant temperature, continuous fluctuation and non-continuous fluctuation temperature based on the fluctuation characteristic of environment temperature, and the evaluation models of aquatic product quality about different temperature fluctuation conditions are to be created.
